It’s been cool and rainy for the last two days, but no one is complaining. Our lakes are low and the city has been rationing our outdoor water use for over a year. My fingers are crossed that we actually have the inch of rain that’s in the forecast. Meanwhile, it’s perfect baking weather. What better way to enjoy a rainy morning than with a piece of warm quiche and a fresh, homemade blueberry muffin?

Quiche was a hard sell around our house for many years with a husband and two sons who love beef. One of my sons would exclaim, “Oh, no! Not cheese pie….” when he realized it was on the menu. Quiche was “girl food,” and “real men don’t eat quiche.” Fast forward to adult sons, and it is now an approved menu item. This one has bacon, mushrooms and green onion, as well as PepperJack cheese and eggs baked in a pastry shell.  Mmm, mmm good.

Add a few muffins baked from scratch and filled with fresh, plump blueberries. Now that’s a suitable brunch for a rainy morning, don’t you think?

Now for the sad part of my tale. I baked all this up and sent it off with my older son to take to work this morning. He is an accountant and they are working weekends to complete people’s tax returns by April 15. I’m not really sad to have done the baking for him; it’s nice to know that ole’ mom can still come through for one of her boys. They are my real treasure, no matter what the weather.
